To achieve this he works closely with local small-holders to find produce those are rich in flavour. The Chef takes innovation to the edge. His “à la carte” dishes scrupulously respect nature and the rhythm of the seasons and are always sublime.
To finish the meal in style, guests can trust in the talents of our pastry chef who also works essential oils into his desserts, such as his “vanilla soufflé and selection of essential oil crystals”. The guest chooses the crystals and sprinkles them onto a quenelle of olive oil ice cream before plunging it into the soufflé.
