Chief Grégoire Sein invites you to savour a healthy seasonal cuisine that is at once simple and refined.

Native of Basque country, he cooks of season produce from the baie of Saint-Jean-de-Luz like traditional market fish or with locally caught freshwater fish to create a selection of gently cooked or grilled dishes.
He also bases his “à la carte” dishes and set menus on regional produce that he rigorously selects from local French and Spanish suppliers in the Basque country. Guaranteed freshness and unparalleled quality for a balanced cuisine!
For example: Banka trout, Aldudes lamb, Iberico de Bellota ham, line-caught Saint-Jean-de-Luz hake, Itxassou calamari and cherries.
